Carrot & Pumpkin Cupcakes

This recipe was given to me by my Aunt.  These cupcakes really are delicious and easy to make. 

Recipe:

Ingredients

Measure

Brown Sugar

96g

Softened Butter

113g

Maple Syrup

170g

Pureed Pumpkin (not the pie filling)

340g

Eggs

2

Plain Flour

320g

Baking Soda

1 tsp

Cinnamon Powder

2 tsp

Salt

½ tsp

Shredded Carrots

128g

Sultanas

128g

 

Method:

1)  Preheat oven to 160°C

2)  Prepare tray with cases

3)  Add all ingredients except carrots and sultanas to a food processor and blend until smooth

4)  Place carrots and sultanas into a mixing bowl and add the cake mixture from the food processor

5)  Gently mix carrots and sultanas

6)  Spoon the mixture into cases and bake for 20 mins or until skewer comes out clean

7)  Allow to cool completely before applying frosting
