Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Slow Cooker Beef & Stout Stew

    My beef and stout stew is a delicious slow cooker recipe.  Add all the ingredients to the slow cooker, go to work and come home to a lovely meal

     Recipe:

    Ingredients

    Measure

    Braising Steak

    900g

    Medium Onions

    2

    Potatoes

    500g

    Carrots

    450g

    Stout

    330ml

    Beef Stock

    500ml

    Garlic Cloves

    3

    Plain Flour

    2 tbsp

    Cornflour

    1 tbsp

    Tomato Puree

    170g

    Salt & Pepper

    To taste

    Method:

    1)  Peel potatoes and cut into chunks

    2)  Peel carrots and cut into chunks

    3)  Peel onions and quarter

    4)  Grate garlic cloves

    5)  Place all veg and garlic into your slow cooker

    6)  Mix beef stock with tomato puree

    7)  Cut the braising steak into 1 inch cubes, season with salt and pepper and toss in plain flour then brown in a pan in 1 tbsp of olive oil

    8)  Once browned add the braising steak to the slow cooker on top of the vegetables

    9)  Warm the beef stock / tomato puree mix in the same pan that you browned the braising steak in.  Be sure to get all the bits of beef from the base of the pan.

    10)  Pour the beef stock / tomato puree mix over the ingredients in the slow cooker

    11)  Add the bottle of stout

    12)  Cook on low for 8 hours or high for 6 hours

    13)  Approx an hour before the end of cooking, mix together the cornflour and water to make a thin paste.  Dissolve into beef mixture and mix to thicken the gravy
