My beetroot tart is a quick and tasty vegetarian dish. This can be served as a starter or light lunch

Method:
1) Pre-heat oven to 180°C
2) Slice onion
3) Cut beetroot into wedges
4) Heat a little olive oil in a large pan, add the onions and soften
5) Add the beetroot to the onions, add the Balsamic Vinegar and cook gently for 10 mins
6) Remove pan from heat and add butter, mix through until it melts
7) Transfer into a large baking dish (make sure it is larger than the pastry)
8) Leave to cool then place the puff pastry on top of beetroot
9) Tuck the pastry down around the edges of the beetroot
10) Brush the pastry with beaten egg
11) Bake in the oven for 20-30 mins until golden brown and the pastry has risen
12) Remove from oven and allow to sit for 10 mins then run palette knife around edges to loosen
13) Place serving dish over top and quickly turn over to release the tart onto the serving dish
14) Sprinkle crumbled feta over the beetroot and then top with rocket leaves and serve
