My rocky road is a quick and easy sweet treat! I’ve used cranberries in this but you can use your favourite things. Add nuts, raspberries, milk chocolate or anything you like!

Method:
1) Line a baking tray with greaseproof paper
2) Break up white chocolate into small pieces in a bow and set aside
3) In another bowl, break up cookies, add cranberries, sultanas and marshmallows
4) Mix together
5) Melt the white chocolate then add to the mixture
6) Thoroughly mix and then pour onto the baking tray
7) Level out and leave to set
8) Don’t put this in the fridge as it will dull the chocolate and soften the cookies
9) Once set, cut into squares and serve
10) This can be kept in an airtight container for a few days
