Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Slow Cooker Beef Chilli

    This tasty slow cooker beef chilli recipe serves 10 people and I have added extra spices to make it hot.  You can reduce the amount of chillies and spices to suit your taste.   Serve with tortilla chips, grated cheese and sour cream.  This can be portioned up and frozen too

    Recipe:

    Ingredients

    Measure

    Minced Beef

    1kg

    Chopped Tomatoes

    2 x 400g Cans

    Red Kidney Beans

    2 x 395g Cans

    Onions

    2 medium

    Chilli Powder

    4 tbsp

    Ground Cumin

    2 tbsp

    Cayenne Pepper

    ½ tsp

    Beef Stock

    300ml

    Olive Oil

    2 tbsp

    Garlic Cloves

    2 large

    Red Peppers

    2

    Long Sweet Red Peppers

    2

    Red Chillies

    2

    Dried Oregano

    1 tsp

    Salt

    1 tsp

     

    Method:

    1)  Peel and chop onions

    2)  Chop red peppers and chillies

    3)  Grate garlic

    4)  Add onions, peppers and chillies to saucepan with olive oil and cook for 5 mins to release the chilli oils and flavours.  Be careful not to let it burn

    5)  Drain kidney beans and add to slow cooker, add the tomatoes, stock and spices too

    6)  Add the onions, peppers and chillies to the slow cooker

    7)  Add the minced beef to the pan used for the onions, peppers and chillies and brown the minced beef on a high heat, stir it all the time.

    8)  Once the minced beef is browned, add it to the slow cooker and stir

    9)  Cook on low for 6 hours stirring occasionally

    You can reduce the spcies and chillies to suit your taste
