Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Mincemeat and Caramel Apple Parcel

    This mincemeat and caramel apple parcel is best served warm with custard, ice cream or double cream.  If you are making this for adults you can add a tablespoon of brandy, rum or whisky to the fruit mixture.  A tasty alternative to the usual Christmas desserts 

    Recipe:

    Ingredients

    Measure

    Apples

    4

    Mincemeat

    ½ jar

    Caramel Sauce

    ½ can

    Sultanas

    250g

    Ready Rolled Puff Pastry

    1 pack

    Egg

    1

     

    Method:

    1)  Grease large flat baking tray with butter

    2)  Pre-heat oven to 180°C

    3)  Peel and core apples and cut into small cubes

    4)  Place apples, sultanas, mincemeat and caramel  into a large mixing bowl and combine

    5)  Unroll pastry sheet onto baking tray and brush all edges with beaten egg wash

    6)  Place fruit mixture along the centre of the pastry then fold up edges to make a parcel

    7)  Brush top with egg wash

    8)  Make a few slashes on the top to let the steam out and then bake for 20-30 mins. 

    9)  Remove and allow to cool

    10)  Sprinkle over some white sugar or make up some runny icing and drizzle over the top for snow effect
