Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    A few more tasty fun treats for kids at Christmas!

    Vanilla Dumped Elf & Melting Snowman Cupcakes.

    All simple to make shop bought ingredients .... all that's required is time and love!

    I was catering for a party of 30 children so had to scale up. Obviously, scale ingredients according to your numbers.

    Marshmallow Penguins.

    Ingredients:

    • 1 x packet very large White Marshmallows (toasting kind)
    • 2 x tubes Writing Chocolate. (you can just melt chocolate and dip marshmallows)
    • 1 x Tube Orange Smarties.
    • 1 x packet Googly eyes (available online although i got mine in Tesco)
    • 1 x tube white icing to act as glue for eyes.

    Firstly remove all Marshmallows from packet and stand them upright on a lined flat baking tin.

    Melt the writing chocolate in boiling water according to instructions on tube.

    When chocolate is soft and has melted, cut off end of tube and squeeze over top of Marshmallows, allowing chocolate to run down sides.

    Now, carefully pick up a mallow and using a sharp pointed knife, choose a "face" side on the Mallow, then slice a slit into it, then push in orange smartie, which will be Penguins nose.

    I used a toothpick inserted into back od Mallow to hold it whilst I pushed smarties in.

    Next blob a little white icing from tube onto back of eyes and position onto mallow.

    Thats it! pretty easy..... yes! So no excuse for not making them!

    Have fun making lots of different faces without even trying!

    TEACAKE PUDDINGS.

    Ingredients:

    • 1 x box well known Teacakes.
    • Icing Sugar
    • Holly Sprinkles.

    Carefully and slowly unwrap Teacakes, as you want to retain the silver wrapping for presentation and trust me, it tears easily.

    Flatten out wrappers and if any do tear, don't throw them away, you can sort of stick them together.

    Lay out all the teacakes on a lined flat baking tin.

    Even if a couple are slightly bashed, don't worry, its not a problem, you can still use them, the kids wont notice.

    Next mix up your icing sugar, as i was covering 30 teacakes i used up about half a box.

    You want it thick but still able to run off the spoon.

    Next carefully using a teaspoon dribble some over the top of each teacake.

    Whilst the icing is still soft, decorate the tops with the green leaves of the Holly sprinkles.

    Then go back over them adding a red berry to each.

    If your pacing them on a tray to serve, lay out the foil wrappers first and place a teacake on each. Makes for a great effect!

    RUDOLPH CHOCOLATE CUPCAKES.

    The kids could help make these, such fun and very messy!

    I haven't included the cupcake making and baking, as I'm sure you all have and can make your own version of cupcakes. (buy plain ones if necessary)

    Ingredients:

    • Chocolate cupcakes.
    • 1 x packet Curly Curly Bits.
    • A handful of Red Smarties (or MnMs)
    • 1 x Box Googly Eyes.
    • 1 x tub Chocolate icing spread (saves time and goes on easy)

    Lay out cupcakes on a flat baking tray. I used a piping bag and put in a ridged end to give the effect of animal fur/coat/hair, whatever you want to call it. Cover the top of each cupcake.

    It is very messy and takes a bit of time but so worth it for the end effect. After you have covered each one, move on to placing a red Smartie in the middle of each one as a nose.

    Next drop in the eyes.

    Then position in the Curly Wurly Antlers.

    Pop them into fridge for ten minutes to set, hahaha thats if your allowed to!

    So now to the Vanilla Cupcakes!

    Again use you own Vanilla cupcake or a Victoria Sponge recipe for making the cupcakes.

    Ingredients:

    • 1 x Tub ready made vanilla icing. (again its just easier)
    • Handful of small white marshmallows.
    • a packet of punch out sugar paper Dumped Elves legs (available from Amazon)
    • 1 x tube silver glitter spray.
    • 1 x tube dark brown or black writing icing.
    • 1 x tube red writing icing.

    Firstly fill your piping bag and cover all cupcakes.

    Next sort out your Elf legs, you will need to pop these out individually and then stick them back to back. Then simply stick them into top of as many cupcakes as you want.

    To make the melting snowmen, take a marshmallow and use the dark brown icing tube to dot on the eyes and make the mouth, then use the red icing to make his nose. you can have fun with this making any shaped mouth to change his expression.

    Next stick him in the icing..... simples!

    finally spray each cake with the glitter and refrigerate to set.
