Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Traditional Scottish Stovies

    Stovies are a Scottish dish normally made with left over roast beef and dripping but these days dripping is not so good for you. I developed these sausage ones and my son loved them when he was little. I serve them with green cabbage and beetroot but you can choose your veg. The guys in the plant love them as they are tasty and filling. This recipe serves 4

    Recipe:

    Ingredients

    Measure

    Potatoes (preferably floury)

    1.1kg

    Large White Onions

    2

    Pork Sausages

    8

    Gravy Salt

    1 heaped tbsp

    Water

    500mls

     

    Method:

    1)  Peel and chop potatoes to roughly the same size

    2)  Chop onions into large pieces

    3)  Remove skin from sausages

    4)  Chop sausages into 1 inch pieces

    5)  Dissolve gravy salt in water

    6)  Put all ingredients into a large saucepan and bring to the boil

    7)  Turn down to simmer and cook for around 20 mins until potatoes are soft and the ingredients start to break down

    8)  Be sure to stir frequently to prevent the stovies sticking to the bottom

    9) Serve and enjoy
