Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Cranachan Cake

    Cranachan is a traditional Scottish dessert. This is my twist, I've made it into a cake.

    Recipe:

    Ingredients

    Measure

    Unsalted Butter

    150g

    Brown Sugar

    50g

    Eggs

    3 medium

    Honey

    100ml

    Whisky

    50ml

    Self Raising Flour

    250g

    Oats

    50g

    Raspberries

    250g

    Granola

    100g

     

    Method:

    1)  Pre-heat oven to 180°C

    2)  Line a loose bottomed 20cm baking tray with parchment and grease sides with butter

    3)  Cream butter and brown sugar together in food mixer until light and fluffy

    4)  Add eggs, honey and whisky and mix through (if it starts to curdle add a tbsp of flour)

    5)  In another bowl, mix together flour and oats and carefully fold into the other mixture

    6)  Once all combined, pour half the mixture into the baking tin and smooth over

    7)  Add the raspberries to cover the full surface

    8)  Pour the remining mixture over the raspberries and smooth over

    9)  Sprinkle the granola all over

    10)  Loosely cover the top with foil to prevent the granola toasting

    11)  Bake in the centre of the oven for 20 mins then lower the temperature to 170°C and bake for a further 40-50 mins

    12)  Leave to cool completely then transfer on to a wire rack
