Foodie Fee

Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Pear & Apple Salted Caramel Tart.

     A simple, quick to prepare, tasty midweek supper dish. So full of flavour and sure fire winner!



    • 1 x packet Puff Pastry.
    • 6 x cooking Apples.
    • 4 x Ripe Pears.
    • 1 x Jar Salted Caramel ( Tesco do a really good one )
    • 1 x egg for glaze plus tablespoon sugar.


    Firstly, pre heat oven to 200 c fan and lightly grease flat baking tray.

    Open up and unroll pastry sheet, place on baking sheet.


    Carefully score a border around outside pastry, about 1 inch deep and lightly prick over the base with a fork. After beating egg, brush around the border and then lightly sprinkle with the sugar.



    Then empty jar of salted caramel, reserving a few spoonfuls for later, into middle of pastry and spread all over up to the edge of the border.


    Peel and core the Apples and Pears and carefully slice into thin slices.



    Carefully arrange apple and pear slices on top of caramel.


    Pour any remaining caramel sauce over the top of the fruit slices.



    Bake in the pre heated oven for around 20/30 mins depending on your oven, until pastry is golden brown and fruit is cooked through.


    Serve immediately with vanilla ice cream or thick vanilla custard.
