Over the last few years, I have been cooking for PureMalt staff, guests and events. I create every day food recipes for all to enjoy and often experiment with the addition of malt extracts in some of my dishes. East Lothian is a county full of great tasting and exciting local produce, which I will try to include in my food whenever possible.  It’s all about quality and flavour – hope you enjoy my recipes!

    Spiced Apple Cake

    Need a way to use up all of the apples falling from the trees this season? Why not try this delicious Apple Cake with a hint of spice - perfect for Autumn!

    Ingredients

    • 150 Gms softened unsalted butter
    • 3/4 cup soft light brown sugar
    • 1 1/2 cups plain flour
    • 1 cup milk
    • 2 medium eggs
    • 1 1/2 tsps baking powder
    • 1 1/2 tsps cinammon
    • 2 bramley apples, peeled and roughly chopped

    Topping

    • 1 bramley Apple sliced thinly skin on
    • 3 tblsps Demerara sugar
    • 1 large tsp cinnamon

     

    Cream butter and sugar together, slowly add the eggs and beat, if it curdles add a little flour

    Then add all flour, cinnamon, baking powder and milk and mix well

    Add chopped apples to batter and continue to mix

    Line a springform cake tin with parchment paper and lightly grease sides with butter

    Pour in the cake mix and level off

    Chop your apples into slices

    Arrange the slices of Apple over the top.

    In a bowl combine Demerara sugar and cinnamon then sprinkle liberally over the top of cake.

    Bake in oven 180c fan for about 40/45 mins till skewer comes out clean.

    Leave in tin to cool and set.

    Serve with thick double cream or custard or even ice cream. Delish!
